Can I use an outlet/plug to power the Gen 2 instead of the regular installation?

No - the Gen 2 uses that wire harness to detect system voltages across each phase in your system. By using an outlet/plug for the power supply to the device, we'd be missing phases of voltage for measurement accuracy and will cause issues with the installation. Very much recommended to install it via the instructions provided as part of the installation guides.
